Traditional Nonya Pineapple Tarts

 had no intentions of making pineapple tarts during my stay here. “I am sure I can tahan 2 years, it’s only going to be 2 years..” But Mom knows me best. She brought along the tart cutter on her last visit here.. “just in case”. And boy was she right!

Pineapple Jam

Ingredients:
3 Pineapples
1 packet Rock Sugar
½ Cinnamon Stick
Fine Sugar to taste

Method:
Mince pineapple, remove excess juice.
Cook the pineapple with rock sugar and cinnamon.
Add sugar to taste
Keep stirring till almost dry and golden brown.

Pastry

Ingredients:
500g Plain Flour
250g Butter
1 Egg + 1 tbsp cold water
Pinch of Salt
1 teaspoon Baking Powder

Method:
Sift the plain flour and baking powder.
Add butter, a pinch of salt and beaten eggs into flour mixture.
Rub in method till crumbly.
Knead into a dough.

Bake completed tarts at 360F,
for about 20 minutes or till they turn golden brown

Yields between 92 to 96 pieces.
