Mac N Cheese

Ariel’s latest hot favourite, and I’m trying to wean her off Kraft’s Easy Mac. oh man…
Ingredients :
250g elbow macaroni
250g whole wheat macaroni
50g butter
1/4 cup flour
3 cups whole milk
2 eggs
1/2 cup finely chopped onions (red or yellow, your choice)
2 cups extra sharp cheddar
1 cup gouda
5 slices of bread
butter
To Do :
1. Butter bread generously, bake at 100C till crispy, very very crispy.
2. Remove and cool. Crush finely.
3. Cook macaroni, till al dente. Drain, set aside.
4. In a pan, melt butter.
5. Make a roux. Add flour, rid lumps, cook for about 5 minutes.
6. Add milk and onions, cook till it thickens, around 10 minutes.
7. Temper in eggs, stir in 3/4 of cheese.
8. Fold in macaroni. Dish into serving bowl.
9. Cover with remaining cheese, top with bread crumbs.
10. Bake at 180C for 30 mins, till golden brown, crispy, gooey and yummy!
Grilled Pork with Pasta

Ingredients :

2lbs pork chops
1tbsp dark sauce
1tbsp soya sauce
1tbsp oyster sauce
2cups of your favorite pasta – cooked al dente
2cups baby spinach
1/3lbs minced pork
1tbsp garlic
1tbsp olive oil
2tbsp oyster sauce
lime quarters
To Do:
1. Marinade pork chops with sauces, leave overnight
2. Grill over the barbeque, 4mins on each side.
3. Heat olive oil, saute garlic till fragrant.
4. Add minced pork, fry till golden brown.
5. Add pasta, spinach and oyster sauce. Combine well.
6. Assemble and serve hot.
Slow Cooked Beef Stew with Whipped Potatoes

Ingredients
Slow Cooker Beef Stew
2lbs cubed beef sirlion
2 medium potatoes, cubed
2 medium carrots, cubed
4 stalks celery
2tbsp chopped garlic
3tbsp oyster sauce
1 cup water
salt to taste
2 tbsp corn starch with 5tbsp water
Whipped Potatoes
4 large potatoes, skinned and cubed
1 cup sharp chedder cheese
To Do:
1. Put all beef stew ingredients into slow cooker, cook on MED overnight.
2. When tender, thicken sauce by adding corn starch mixture.
3. Separately for whipped potatoes, boil potatoes till fork tender.
4. When cooked, whip up in mixer and add in cheddar.
5. Assemble stew with potatoes, serve hot.
Fried Bak Chor Mee

Ingredients:
1/3lb “lor bak”, finely sliced
1/2 cup “lor bak” gravy
1/2lb minced meat (I used Turkey)
3tbsp minced garlic
1tbsp oil
1/2 cup sliced button mushrooms
1/4 cup chopped cilantro
1lb cooked spaghetti or yellow noodles
To Do:
1. Cook spaghetti. Set aside.
2. Heat oil, add garlic, Lor Bak, minced meat. Cook well.
3. Add in Lor Bak gravy. Bring to a boil.
4. Add mushrooms.
5. Add in noodles.
6. Add Cilantro. Mix well.
Baked Tom-yam Fish

Super easy, done in 20mins. No fuss and limited wash up – my kind of dinner!
Ingredients:
1lb fish-of-your-choice fillet
2tbsp tom yam paste
2tbsp minced garlic
1tbsp fish sauce
1tbsp olive oil
To Do:
1. Combine tom yam paste, garlic and oil.
2. Place fish in a piece of aluminium foil that is big enough to make be folded into a bag.
3. Cover fish with paste.
4. Fold into bag, place on baking sheet.
5. Bake at 350F for 15min.
6. Garnish and serve hot with steamed rice.
This recipe works for BBQs too.
Steamed Pork Ribs

Ingredients :
1lb country style pork ribs, bite sized cut
1 tbsp garlic
1 tbsp ground black bean paste
To Do:
1. Combine all the ingredients, leave to marinate for about 10mins.
2. Steam over low flame for 20mins.
Serve hot with rice.
Easy Five-Spice Chicken Wings

Ingredients :
6 pc whole chicken wings
2 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp sesame oil
1 tsp five spice powder
To Do:
1. Combine all the ingredients and leave it to maserate for at least 1hr.
2. Grease a baking sheet, and bake at 400F for 20mins.
(Optional)
3. Serve with bite-sized pieces of honeydew – to balance the saltiness and spice in the chicken.
Bacon Wrapped Cod with Asparagus and Mashed Potatoes

This is a real quick a-do. No kidding! All done in half an hour.
Ingredients :
2pc Codfish
5 strips bacon (any kind)
10 spears of Asparagus (cut into thirds)
4 medium potatoes
2 tbsp butter
4 tbsp half-and-half
To Do:
1. Wrap bacon around cod. Place on a hot skillet. 4mins on each side. Remove.
2. Cut remaining bacon into 1/2 inch pieces. Cook in skillet till golden. Remove all the rendered fat in the pan.
3. Add asparagus. Cook for 4mins. Turn off heat and leave in skillet for a further 2mins.
4. Cut potatoes and cook in salted cold water. Remove when softened. Place in mixer with half-and-half and butter for 2min.
5. Plate up! Serve and enjoy!
Baked Chicken Wings with Spinach

3 steps only with minimal washing up!
Ingredients :
1lb chicken wings
3 tbsp sesame oil
2 tbsp soya sauce
1 tbsp ketchap manis
Shao Xing Cooking Wine
pepper
1 package washed and ready to eat Spinach
To do:
1. Marinate chicken wings in condiments for 15-20min
2. Bake at 400F for 20min
3. Serve on top of spinach
this works well reheated in the microwave, with the spinach wiltered.
