Home-made Vanilla Ice Cream

Ingredients :DSC_0270
3 egg yolks
2 cups whipping cream
2 cups half and half
1/2 cup sugar
1 vanilla pod, split and scrapped

To Do :
1. Whisk yolks and sugar till creamy.
2. Bring cream and half and half to a slow boil.
3. Add one cup of milk mixture to eggs. Combine well.
4. Repeat.
5. Pour egg mixture into milk, cook until mixture coats the back of a wooden spoon.
6. Stir in vanilla.
7. Refrigerate overnight in a lidded container.
8. Apply to ice cream maker, according to instructions.

Chocolate Mousse

Super Easy it’s ridiculous.

Ingredients:
2 cups heavy whipping cream
1 can condensed milk
4oz swirled semi-sweet chocolate and white chocolate morsels

To Do:
1. Melt chocolate morsels in condensed milk.
2. Whip up heavy cream until soft peaks.
3. Fold whipped cream into chocolate mixture.
4. Apportion and chill for 4hrs.

Summer Maccha Bavarois

Ingredients:
1 oz powdered gelatin
6 tbsp water
3 egg yolks
1/3 cup sugar
1 tsp cornstarch
pinch of salt
1 1/4 cups milk
1 tbsp matcha

1 cup fresh cream

syrup to taste
(2 cups sugar dissolved in 1 cup water)

Summer fruits of choice – Rasberries, Strawberries, Blueberries, Blackberries, Cantelopes, Peaches

To Do:
1. Dissolve gelatin in water.
2. Separately, combine the egg yolks, sugar, cornstarch, and salt. Stir till white.
3. Make a smooth paste combining maccha and 2 tbsp of warm milk.
4. Add the rest of the milk to the egg yolks and cook over a double boiler. Remove and cool slightly.
5. Add the gelatin and maccha paste. Mix well.
6. Fold fresh cream into the mixture.
7. Pour into individual glasses and refrigerate until set.
8. Serve garnished with fruit and syrup.

Baklava Pockets

The “Byzantine Favorite” adapted and made easy. Surprisingly, phyllo pastry was very forgiving to work with and I used whatever I had in my pantry. I also served this without the syrup. Works just as well.

Ingredients :

Baklava
1 cup chopped nuts
1/4 cup raisins
1/4 cup panko bread crumbs
2 tbsp sugar
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
Pinch of salt
1 stick melted butter
3 tbsp honey
18 sheets phyllo dough

Syrup
1 1/2 cup water
1/2 cup sugar
1 cinnamon stick
1/2 cup honey

To Do:
1. Combine nuts, raisins, cinnamon, cloves, sugar, honey and 2 tbsp of melted butter.

2. Brush melted butter on 1 sheet of phyllo pastry, then place another on top of it. Build up with 6 sheets.
3. Cut into 8 equal pieces.
4. Gently press each piece into muffin tin cup.
5. Fill each cup with 2 tbsp of nut-raisin mixture.
6. Fold up sides to form a satchel.
7. Bake at 350F for 20-25min

8. Combine water, sugar and cinnamon stick, bring to a boil. Add 1/2 cup honey. Set aside.

9.When baklava is ready, serve warm, with or without syrup.

Custard Profiteroles

My first attempt at choux pastry and it was not as terrifying as I thought. I was reminiscing about Chin Mee Chin’s custard puffs.. having grown up in Katong, those custard puffs were a given at afternoon tea. Yummy!

Ingredients for Puffs :
1 cup water
1/2 cup butter
1 cup AP Flour
4 eggs

Ingredients for Filling :
5 tbsp sugar
5 tbsp custard powder
1 cup milk
1 egg

To do:
1. In a saucepan, heat water and butter to a rolling boil.
2. Add flour, stir vigorously over low heat until mixture forms a ball. Remove from heat.
3. Beat eggs in all at once, until mixture is smooth.
4. Drop teaspoonfuls on an ungreased cookie sheet.
5. Bake at 400F for 25min

6. Separately, place ingredients for filling into a double boiler for 5min, till slightly thickened.

7. Cut puffs horizontally in half, add custard filling.

Makes 30 pieces.

For variations, you could use creme fraiche with fruits (yum!) or fresh cream drizzled with chocolate (double yum!). Savory fare could include tuna mayonnaise; smoke salmon with cucumber slices.

Easy Bread Pudding

Wanted to do something different and special for Ariel’s afternoon tea, and we had some leftover french bread from the party day before.. ~Bread Pudding~ was the way to go! Hee!

Ingredients :
2 cups day-old bread
3 tbsp semi-sweet chocolate chips
1 small banana
4 eggs beaten
2 cups milk
½ cup white sugar
1 teaspoon vanilla extract

To Do :
1. Combine well all ingredients ex-bread.
2. Add bread, allow to soak completely.
3. Bake at 350F for 45min, or until top springs back when tapped.
