Curry Puffs

Filling
3 tbsp cooking oil
1 tbsp chopped garlic
1/2 medium onion, diced
3 medium sized potatoes, cubed
3 tbsp curry powder
1 tbsp chilli sambal (optional)
4 chicken tenders, cubed
1 tbsp chicken buillon
1 cup water

3 hard-boiled eggs, quartered

Pastry
2 cups AP flour
5tbsps shortening
1/2 cup water
1/2 tsp salt

To Do :

Filling
1. Heat oil, saute garlic and onion till tender.
2. Add chicken, cook well.
3. Add in curry powder, chilli sambal, water and seasoning. Bring to boil.
4. Add potatoes. Cook till fork tender, and gravy is reduced to paste.
5. Cool.

Pastry
6. Combine all ingredients.
7. Rest the dough for 1/2 hr.
8. Roll out dough to a 3mm thickness, cut into a circle.
9. Place filling in the middle, with a pc of hard boiled egg.
10. Crimp the sides up to seal.
11. Deep fry till golden and irresistable.

Shepherds’ Pie

4 large potatoes
1/2 cup sour cream
1 tsp salt
1 tsp freshly cracked black pepper

1lb ground beef
1tbsp olive oil
1tbsp garlic
1/3 cup diced onions
1/2 cup frozen carrots and peas
1tbsp tomato paste
1/2 tsp salt
1/2 pepper
1 cup mixed 5 cheeses

To Do:
1. Skin and cube potatoes.
2. Cover with just enough water, bring to boil for 15mins or fork tender.
3. Drain water. Place in mixer with creamer peddle.
4. Add sour cream, pepper and salt. Mash till creamy and smooth.
5. Heat oil in pan. Add garlic and ground beef.
6. When fully cooked, add onions, carrots and peas.
7. When carrots are cooked, add in tomato paste and seasoning.
8. Assemble. Line the bottom of an oven proof dish with the meat mixture.
9. Sprinkle cheese over this layer, and top with mashed potatoes.
10. Broil HI in the oven for 15min, or till golden brown and delicious.

Easy Quiche

Quick and easy!

Ingredients:
1 Ready-to-bake pie crust
2 tbsp AP Flour
1 tsp salt
1 tsp chicken bouillon powder
pepper to taste
5 eggs
1 cup whole milk

1/2 cup chopped spinach
1 cup Monterey Jack cheese
1/2 cup canned mushrooms
1/2 cup diced turkey franks
1 cup diced cooked ham

To Do:
1. Combine flour, eggs, seasoning and milk.
2. Place pie crust in pan, layer out ingredients.
3. Pour egg mixture over.
4. Bake at 350F for an hour.

Mini Apple Crumble

Rustic … and VERY easy!

Ingredients :
1 package store bought ready-to-use pie crust
4 apples diced

1 stick butter
1 cup sugar
3/4 cup AP flour
1 tsp cinnamon
1 tsp nutmeg

To Do :
1. Combine butter, flour, sugar and spices until a crumb-like texture is achieved. Set aside.
2. Cut and line muffin tin with pie crust.
3. Fill with diced apples.
4. Top with butter-sugar-flour mixture.
5. Bake at 350F for 35mins.

Makes 30pieces.

Easy Beef & Potato Pie

2 methods here, the easy one and the even easier one. I personally enjoy the “Speedy Fix” for Edmund’s day-flying days. Easy, and less clean-up!

Beef & Potato Pie Easy Recipe
Crust Pastry Ingredients :
½ tbsp chilled butter
4 tbsp chilled shortening
3 cups all purpose flour
2 tbs. sugar
½ tsp salt
6-8 tbsp ice water

To do :
1. Combine the butter, shortening, flour, sugar, and salt with fingertips until crumbly.
2. Add ice water, tossing lightly with fingertips. Gather the dough into a ball.
3. Refrigerate for at least a half hour.

Makes 1 x 9 inch crust

Filling Ingredients :
2 tbsp vegetable oil
2 lbs lean stewing beef
2 tbsp all-purpose flour
1 pinch salt
1 pinch ground black pepper
1 diced onion
1 bay leaf
4 potatoes cubed
1 carrots cubed

To do:
1. Coat meat with flour, season with salt and pepper.
2. Heat oil, brown meat.
3. Stir in the potatoes, carrots and bay leaf. Continue cooking over low heat until vegetables are tender. Remove bay leaf before filling up the pastry crust.

4. Assemble and bake at 400F for 1 hour.

Beef & Potato Pie “Speedy Fix” Recipe

Ingredients :
2 pc Pillsbury instant pie crust
1 can Beef and Potato soup
1 lbs stewing beef
3 potatoes cubed
1 carrot cubed

To do :
1. Cook beef, potatoes and carrots with soup till tender and soup is reduced to gravy.
2. Defrost pie crusts, and assemble with filling.
3. Bake at 400F for 45min
