Kueh Salat

dsc_1292Ingredients:

Rice layer
2 cups glutinous rice
150ml coconut milk
200ml water
pinch of salt

Custard Layer
3 eggs
250ml coconut milk
50ml water
160g sugar
1/3 cup rice flour
1/3 cup tapioca flour
1/2 tsp pandan paste

To Do:
1. Soak glutinous rice for 30mins.
2. Combine all ingredients and cook in rice cooker, stir ocassionally.
3. Separately, combine eggs, sugar and coconut milk. Cook over a low flame.
4. Combine flours, sift into egg mixture. Remove from heat when mixture thickens.
5. Assemble. Layer rice at the bottom and pour custard mixture over the top.
6. Steam on LOW for 30mins.
7. Cool before cutting.
